Our Favorite Christmas Cookie

We love baking cookies in our house no matter what time of year it is. However, Christmas cookies are extra special. We usually kick off the Christmas cookie baking right after Thanksgiving. That’s usually when we start decorating the house as well. It’s such a fun and festive time of year so why not start early!
We bake a large assortment of different cookies and cakes at Christmas time. I love the excuse to try new recipes. I’m always looking for fun, somewhat healthier dessert options. I have collected a large number of favorites. Most of them are saved under my Pinterest board for quick access. Since the kids always want to help, I love having some easy recipes on hand. Our favorite is Peanut Butter Blossom cookies.
Peanut Butter Blossom cookies are such a classic. They are very easy to make and require little ingredients. Plus the kids love adding the Hersey kisses on top! It’s a good extra cookie to make when you want to make more than one kind while keeping the kids attention. I keep ours gluten-free my omitting the flour. I generally stick to this recipe:
Ingredients
1 cup creamy peanut butter
3/4 cup sugar
1 egg
1 tsp vanilla
Package of Hersey Kisses
Directions
Preheat oven to 350 degrees. Mix all ingredients together (except the Hersey kisses). Refrigerate the batter for 15-20 minutes so that it is not too sticky when rolling. Next, roll into balls and place about 2 inches apart on a cookie sheet lined with parchment paper (they will spread). Bake at 350 for 10 minutes. Remove from oven. Unwrap and press Hersey Kisses into center of cookie. Let cool then enjoy!
I like to double up on this recipe and make 2 batches. They are so yummy and go so quick!
